Chettinadu style idiyappan

Preperation time:
45 minutes
Serves 4



Ingredients for kaaram idiyappan:
Idiyappan flour-1 1/2 cups
Small onions-thinly sliced 20 nos.
Green chilli-2 (slit)
red chilli-1(long)
Salt to taste
Buttermilk-1/2 cup

Seasoning for kaaram:
Mustard-1 teaspoon
Hing-1 teaspoon
Split urad dal-1 teaspoon
Curry leaf-1 sprig

Ingrediants for sweet idiappan:
Idiyappan flour-1 cup
Milk-1/4 cup
Shredded coconut-1/4 cup
Sugar as required
Ghee-2 tablespoons
Cardamom powder-1/4 teaspoon(optional)

you will also need an idiappan press:



Preparation:
In a pan take two cups of water and bring it to rolling boil
In a mixing bowl take the idiappan flour and add the hot water little by little and mix it with a big stainless steel spoon
Be cautious as it will be very hot.
Side by side,pour water and spread the wet cloth on the idly maker,close it and keep it on the stove.

When the dough has slightly cooled down and when you can touch with your hands, grease your hands With a little oil and make the dough into small oblong pieces to  fit your idiappan press.
When the idly maker starts to steam, open the lid and press the idiappan round and round on the idly plate. Close it and leave it to steam for a few minutes before pressing the next one.

You can press about 5 to 6 times in one idly plate.after which you have to remove it and start over.
Continue it till the whole dough is finished.
Each time you flip over a plate, sprinkle some normal water and loosen the idiappan strands.


For kaaram idiappan:

Keep a kadai on the stove, add some oil and when its warm and ready add the seasonings mentioned above and when it splutters add the onions, green chilli and salt and fry it for two mins.

Now add the buttermilk into it and let it become warm.
Now add the idiappan strands we had prepared earlier and mix thoroughly and check for salt
Your kaara idiappan is ready to be enjoyed.

For sweet idiappan:
In a mixing bowl, take the idiappan strands and add the ingredients mentioned for 'sweet idiappan'
and mix thoroughly and transfer to a serving bowl.
Your sweet idiappan is ready to be enjoyed.



Notes:
I have given this recipe in traditional chettinad style. you can also just prepare the plain idiappan and enjoy it with coconut milk, or any other savoury side dishes.
If the water is not bubbling hot the dough doesn't get cooked when you pour and mix it, so it wont come out of the press. you will end up wasting your dough. so it should be hot enough to cook the flour.
