Snake gourd rings
Are your kids dodging to have they veges like mine. Here are my tricks to handle them.. All kids are addicted to fried foods nowadays, so why don't we sway to their side to bring them back on track at least till they grow up. Snake gourd has a lot of benefits like it detoxifies our kidneys, enhances digestion strengthens respiratory track etc.. So, we need to add it to our diet as much as possible.
How I started doing this recipe is a funny story. Once when I was sick I asked my maid to cut vegetables for me so I told her to cut what was kept on the counter as thin disk and remove the seeds inside. I had washed and kept bitter guard on the sink but she took the snake gourd which was in my shopping bag and had cut it as rounds and left it in a box in the refrigerator. So next day morning when I had to cook for school I found this and it was late so I tried something different with the time I had and landed up with this dish long back. Then we started doing it once in a while. Since my kids have grown up, I completely forgot about it and started doing snake gourd in the regular way..
Recently after starting to blog one of my relatives said she tried rings with snake gourd and it came out well. Thanks to her to remind me I did it again. But the truth is when I make it this way a lot more goes in than other types. So I thought of posting it for moms who have a hard time trying to add vegs to their kids diet.For long, my son used to like snake guard only if it made this way.But, now he understands too much fry is not good so he manages with other dishes too.

Preparation time : 20 minutes
Serves 4
Ingredients:
Snake gourd - 3 nos. (small)
Besan flour - 1/4 cup
friend channa dal flour - 4 tbsp
Rice flour - 4 tbsp
Cooking soda - 1/4 tsp
Red chili powder - 3/4 tbsp
Salt to taste
Oil for frying
Preparation :
Wash and thinly slice the snake gourd into rounds. Remove the center seeds part out of the slices.
Put it in a microwave safe bowl and microwave it for 1 minute.
In a mixing bowl take all the ingredients along with required amount of salt. Mix it into a smooth batter with water without any lumps. The batter should be just like idly batter ie. not too thin nor too thick.
Put all the slices into the batter and mix thoroughly so that all the pieces are coated evenly.
Heat oil in a kadai for frying, when its hot and ready, drop it one by one into the oil and cook it on medium heat, flip it on both sides.
Do not overcrowd the oil so that it cooks evenly. Cook until its golden brown.
Snake gourd rings are ready to be enjoyed either as a starter or as a snack. It can also be a good side dish for variety rice like coconut rice or lemon rice.
Notes:
We are microwaving it, just to get little water out of it as it makes it tender so that the batter sticks to it better.
If you don't have a microwave, you can just dry fry it on a non stick on medium heat for just few seconds until it just becomes a little tender.
