Sambar Sadam

Hello everyone today I'm going to post a one pot meal as its Sunday and also solar eclipse.Yesterday my mom had called saying the rules for eclipse, she said we should eat before 8 am and after that we shouldn't take anything till 2 pm and should take head bath and then cook after 2 pm... and so on. So, I thought what to prepare immediately at that time when all will be hungry.  

Then it clicked to me that i had already taken pictures for posting sambar sadam but didn't write. So, why not today so that I could refresh myself and prepare it immediately and you can also try preparing this immediately in just 20 minutes after the eclipse- if you follow it. Even otherwise, its a healthy and holistic meal with all the vitamins and minerals required to boost our immunity at the current situation.

When I used to complain of any pain or other.. I have heard my grandpa often saying eat your drumstick and brinjals it will take care of the rest. Its very true, eating local vegetables especially our country vegetables like turkey berry (sundaikai), cluster beans(kottavarai) , coccinia (kovakkai), ladies finger (vendaikai) , broad bean (avaraikai) etc. will help you stay healthy. 

This recipe has a overload of veges but in a wonderful combination that you don't feel like avoiding any vegetable so why not do it to improve our own health and our families too:) Its the only best way I get a chance to include many of these veges in my son's plate ;) so, i do it two weeks once. 

In this post - pictures, I have used whatever vegetables were available but I will give the extensive list of  other vegs which could be included in this rice in the notes section. Here goes the recipe:

Preparation time: 20 minutes
Soak time 15 minutes
Serves - 6 

Ingredients:
Raw rice - 1 cup 
Thoor dhal - 1/2 cup 
Moong dhal - 1/3 cup
Onion - 15 nos. (shallots/ sambar onion)
Tomato - 1 big
Green chili - 2 nos.
Red chili - 1 no.
Drumstick - 1 no.
Brinjal - 3 nos.
Broad beans - 10 nos.
Potato - 1 small
Carrot - 1 small
Beans - 10 nos.
Sambar powder - 2 tbsp (home made or store bought)
Turmeric powder - 1/4 tsp
Tamarind - 1 small lemon sized ball
Salt to taste
Jaggery powder - 1/2 tbsp (optional)
Oil - 4 tbsp
Ghee - 2 tbsp
Coriander to garnish

For seasoning:
Split urad dhal - 1/2 tbsp
Mustard - 1/2 tbsp
Methi seeds- 1/4 tsp
Channa dhal - 1/4 
Jeera - 1/2 tbsp
Pepper - 1/2 tsp
Hing - 2 pinches

Freshly ground sambar powder: (just enough for this recipe)
(dry roast and grind the following into a fine powder.)
Red chili - 4 nos.
Coriander seeds - 1 tbsp
Channa dhal - 1/2 tbsp
Urad dhal - 1/2 tbsp
Jeera - 1/4 tbsp
Pepper - 1/4 tbsp
Methi seeds - 1/4 tsp

Preparation:
Wash and soak the rice and dhal together for minimum 15 minutes. 

Soak tamarind in 1/2 cup of water and squeeze the pulp out of it.



Wash and dice the veges and cut the drumstick into small pieces.
Heat a pressure cooker add oil, when oil is hot and ready add the seasonings.

When the seasonings starts to splutter add the onion, chilies, tomatoes and curry leaves, one by one and fry till the onion changes color and tomatoes become mushy.
 
Now, add the vegs along with turmeric powder and sambar powder and saute for a few minutes till the raw smell of the spices goes away.

Then add the soaked rice and dhall draining the water it was soaked in.
Add required amount of salt as per your taste and fry the rice for a few minutes so that the oil gets coated on the rice. 

Now, add 5 cups of water in the same cup in which you measured the rice and dhals.

Mix thoroughly and check for salt, then add the jaggery powder and close the cooker and allow it to cook for 6 to 7 whistles.

Open the cooker once the steam is out, then add the tamarind pulp.

Allow it to cook mashing it slightly with the spoon until it becomes homogeneous then add the ghee and freshly chopped coriander leaves for garnish.

Your healthy and easy Sambar sadam is ready to be relished with fryums of your choice.

Notes:

Freshly prepared sambar powder definitely add to the flavor of the dish. But you can definetly add what you have in hand if you are in a hurry. 

Adding jaggery powder enhances the taste of the whole dish. Try preparing it once with and once without adding it, you will definitely know the difference. Its actually a magic taste maker.

list of vegetables which can be added to this preparation are: cluster beans, raw banana, squash, pumpkin, etc.

There is an other traditional method of preparing sambar sadam which I make when I'm preparing for prasadam, I would post very soon.
