Saiva Meen Kuzhambu

Want a special vegetarian dish as you don't get non-veg during the lockdown? Well then, you can try this out. Many of us feel lazy to clean up banana flowers, but it is a wonderful nutritive item which is not liked by many because of its astringent(thuvarpu) taste, but this dish is very delicious and tastes very good on contrary to the usual dishes you make with banana flower.  So lets get started with this healthy and tasty recipe...
Preparation time:30 minutes
Serves 4

Ingredients:
Banana flowers-20 to 30 nos
 
Salt to taste
Oil to fry
Mustard oil-2 tbsp
Tamarind-1 small lemon sized ball
Small onion-20 nos
Tomato-1 (big)
Garlic-4 to 5 cloves
Curry leaves-1 sprig
Turmeric powder-1/4 teaspoon
Kuzhambu chilly powder-2 tbsp.
Coriander powder-4 tbsp.
Coconut milk-1/4th cup

For seasoning:
Jeera-1/4 teaspoon
Pepper-1/4 teaspoon
Methi seeds-1/4 teaspoon
Sauf-1/4 teaspoon

For batter:
Basil-1/4th cup
Maida-3 tbsp.
Rice flour-3 tbsp.
Red chilly powder-1/4th teaspoon
Baking soda-2 pinches
salt to taste

Preparation:
Clean the banana flower,removing the broad petal and the middle portion of the flower as shown in the picture

Wash and finely chop the rest of the vegetables and soak the tamarind in water to get the pulp out of it and keep it ready.
Use the ingredients given to make batter, add water and mix it to an idly batter consistency.
Put all the cleaned flowers into this and mix thoroughly.

                                       
Heat oil in a kadai, when its hot and ready, reduce it to medium flame and start dropping the flowers one by one into the oil, but do not overcrowd.Fry until it becomes golden brown.                                                      
Remove them from the oil and drain the excess oil on a paper towel.
Place a heavy bottomed vessel on medium flame, add mustard oil, when its hot and ready add the seasonings, when they splutter add the onions and garlic,fry till they become translucent.
Now add the tomatoes and curry leaves along with turmeric powder, fry till the tomatoes become mushy.
Add coriander powder and chilly powder and mix thoroughly and let it cook for a minute.
Then add the tamarind pulp into it along with salt to taste and allow it to cook till the oil oozes out on the sides of the pan.
Check for the taste, if required add more salt and mix it thoroughly.                                                           
                                           
Next add the coconut milk along with the fried banana flowers and allow it to cook for another 2 minutes so that the flavour of the banana flowers fuses with the dish.
Now your dish your dish is ready to be served hot with rice.

Notes:
If it s homemade coconut milk, use 1/4th cup of the 1st milk, if its store bought you can add 4 tbsp.
This is just to set the right consistency of the dish and also to enhance its flavour.


The fried banana flowers is also a very good and unique starter which will surprise your guests.
