Staying indoors is really annoying and restrictions makes us want for more of what we are missing. The other day, my son was asking why this government is not even allowing us to go to beach and come back. I felt how he must be feeling to say so..
Kids are the worst impacted ones who have to accept restrictions forced at this age. But all is well .. they will learn to live as better beings after undergoing all this pressure;) Speaking of beach I was reminded of the sundal and kadalai there, so I made this for snack and thought of posting it up.
Those of you all who love beach walk would never say no to that crunchy munchy kadalai chat served steaming hot. I don't deny the fact that its unhygienic to have food kept in open but its a really healthy snack which has balanced nutrients and protein as it has a lot of vegetables packed into it.So its better to make it at home and stay safe and healthy.
My family loves it too. At least, when we satisfy our cravings - we feel better and overcome our boredom and get our energy levels back so as to take more of this pressure yet to come for the rest of the months till this corona forgives us and vanishes..
So, here is the simple and very easy recipe but its sure to boost up your spirits. I feel happy that I'm able to do at least this for my readers. Do try it out and have it with your whole family in the table with a chitchat and let me know whether it works out for you.
Preparation time: 20 minutes
soaking time -30 minutes
Serves - 4
Ingredients:
Raw peanuts - 2 cups
Onion - 1 big
Tomato - 1 big
Carrot - 1 medium
Raw mango (slightly ripe) - 1 medium
Cucumber - 1 medium
Cilantro - 1 bunch
Chili powder - 1/4 teaspoon
Lemon - 1 no.
salt to taste
Preparation:
Wash the peanuts and soak in enough water along with salt to taste for half an hour.
Transfer it along with the water it was soaked into a pressure cooker and add little water if required and cook it for 6 whistles.
Open the cooker once the steam is out.
Drain the water out and transfer the cooked peanuts into a large mixing bowl and keep aside.
Wash and finely chop or grate all the vegetables mentioned as per your choice.
Add them into the mixing bowl with peanuts along with chili powder and mix thoroughly.
Now squeeze the juice of one lemon into it and mix it again.
Your energizing snack is ready in minutes.
Notes:
You can chop the vegetables as per your wish ie. some like it in chunks some prefer it thinly scraped which will look more appealing no one can deny but my kids removes all the cucumber and mango pieces if they are are visible so I finely chop them using my Tupperware smart chopper which makes my job not only easy but also makes me happy as kids eat them all up.
If your mango is raw and not slightly ripe you need to avoid the lemon juice otherwise it will become very sour.
For those who like north Indian chat, you can add amchur powder and chat masala powder 1/4 teaspoon each to make the dish to your liking.
