Jowar(white cholam) dosai

Using millets for everyday cooking, is a lot more healthier than using rice. Many of the rice dishes can be substituted with different types of millets, provided you know the right proportion for it to taste good.Here is a way to include this naturally gluten free food in your daily diet

Preparation time:30 minutes
Soaking time: 4 hours
Fermentation time-8 hours
Yields 15 dosas
Ingredients:
Jowar(white cholam)-1 cup
Idly rice-1/2 cup
Urad dal-1/2 cup
Meithi seeds-1/2 tbsp
Salt to taste
Cooking oil

Preparation:
Wash the jowar 3-4 times, so that the small plant particles washes away
Then wash the rice and soak both together in a bowl with enough water
In another bowl, take the urad dal and meithi seeds, wash and soak them with enough water.
Grind the soaked rice and jowar in the forst batch until its smooth without any grains.
Remove it in a vessel, the grind the urad dal along with meithi seeds into a fluffy batter adding enough water whenever required
Now remove the urad dal batter into the same bowl.
Add required amount of salt and mix thoroughly with your hand for ateast 5-8 minutes so that mixture becomes a homegeneous one.
transfer it to a big vessel so that it has space for fementation.
Cover it and leave it in a warm spot on the countertop.
Leave it to rest for 8 hours to ferment
Then when you open the vessel, the batter would have risen up and would have become double the volume, which means it is ready for making dosas.
Using the deep dosa ladle, mix thoroughly to break the fermentation, this will reduce the batter to its original volume
Now add water and mix to get to the dosa batter consistency
Heat the dosa tawa, when its hot and ready reduce to medium flame and lightly brush oil on the tawa.
Start pouring the dosa.
Pour some oil on the top too. Cover and cook until you hear a crackling sound which means the steam is condensing and dosa is ready. You can fold it and take it out for a soft dosa.
If you want a roast dosa you can flip and cook for a few minutes.
Your healthy Jowar dosa is ready to be served with chutney of your choice.

Jowar is white cholam which is very healthy and has many nutritional benefits.

In the above recipe, the picture I have posted is for 2 times the ratio of ingredients mentioned here.
So I have fermented the batter in 2 vessels

This wholesome dosa can be fed to babies also as this millet is easy to digest.

I used 1 for chola dosa and the other for kaara kuzhi paniyaaram
