Vaalaikkai varuval

With all this corona and lock-down going on...We are forced into lots of work. Today was hectic and I just had  half an hour to make lunch after the morning chores were done. So i decided to make this along with bhindi sambhar. It was really easy and quick to make and everyone in the house enjoyed it too. So I thought you would also give it a try when you're in a hurry.

Preparation time :
20 minutes
Serves 5

Ingredients:
Raw plantain-2 (medium)
Turmeric powder-2 pinches
Salt to taste
Sambhar powder- 4 tablespoons
Oil to fry

Procedure:
Peal and cut the plantains into finger sized pieces as shown in the picture
Wash thoroughly
In a vessel, boil water with salt and turmeric when its hot add the vegetables into it and cook for 2 to 3 minutes or until its cooked.(when you insert a fork, it should smoothly go in)





Drain the water, let it cool for some time so that it will be easy to handle.
Now add sambhar powder and sprinkle some water and coat the vegetable thoroughly
Let it rest for 5 to 10 minutes
Now heat the oil in the kadai, when its hot reduce it to medium flame and start dropping the vegetables few at a time and fry for 2 to 3 minutes until they are golden brown.
Remove it from the oil and drain the excess oil in tissue paper.
Your vaalakkai fry is ready to be enjoyed with rice as a side dish.

Notes:
You should be around while cooking the plantain because it cooks very fast, if you just cook for one extra minute it becomes mashy.
If it becomes mashy, you can't do this recipe.
In that case you can add chopped onions and green chilies and make it as balls and fry it in the oil.
This is only for those who are new cooks who might get stuck if they land up in a bad situation
