Noodle Frittata
The main ingredient of a frittata is eggs. It is a delicious Italian dish which is very simple to make and is also very tasty to eat. This quick dish is a perfect choice when you have unexpected guests or want to throw an impromptu party. It also works well for a heavy breakfast or a hearty brunch. So let's jump right into the recipe...
Preparation time:20 minutes
Ingredients:
Eggs-8
oil-4 tablespoons
Carrot-1 (med)
Cabbage-1/2 cup(sliced thinly)
Capsicum-1/2
Noodle-1 pack(without masala)
Coriander leaves to garnish
green chilly-2 nos.
Oregano or Italian seasoning-1 tablespoon
Salt to taste
Pepper-1 tablespoon
Preparation:
Wash and chop all the veggies as shown in the picture
Break all the eggs in a mixing bowl and whisk along with 2 tablespoons water until they become frothy
Cook the noodles in enough water and little oil. When its cooked, drain and set aside.
Place a pan over medium heat, pour oil, when it's hot and ready, add the veggies along with chilly and fry till they are partially cooked so that they stay crispy.
Now add the noodles along with salt, pepper and oregano. mix thoroughly.
Cover and cook on very low heat for 5-6 minutes.
Open and check if it's done by inserting a toothpick or a fork.
Now, flip the dish onto a plate and flip it again on another plate.
Once again flip it into the pan.
Cook covered for 2 minutes.
Open and transfer it to a plate.
Cut it into wedges and serve hot garnished with coriander leaves
Notes:
It's better to use freshly ground pepper for better flavour.
You can also add boiled or frozen corn,mushrooms, olives, jalapeno and other veggies which you prefer.
While flipping, you should see that the top is cooked properly so that it doesn't break into pieces while flipping.
