This is a very simple and good lunch box idea other than the regular rice preparations (like pulliokara or lemon rice). Chopping veges is a boring task everyday,this dish doesn't require much of it and also has more nutritional value along with high fibre content.


Preparation time:20 minutes

Serves:4

Ingredients:

Coriander leaves – 1 cup

Mint leaves – 1 cup

Green chili – 3 nos.

Onion – 1(medium)

Tomato – 1(medium)

Coconut – 2 pieces (1 inch)

Ginger garlic paste – 2 table spoon

Garam masala powder – 1 table spoon

Oil - 1 table spoon

Ghee - 1 table spoon

Salt to taste

 

For seasoning;


Cinnamon – 1 piece

bay leaf – 1

Jeera – 1/2 table spoon

Pepper - 1/2 table spoon

Sauf - 1/2 table spoon

Cloves – 2 nos.

Star anise – 1 nos

Cardamom – 2


Preparation:

Wash and soak the rice in water for ½ an hour.

Wash mint and coriander leaves



In a mixie jar add the washed leaves along with green chilli, tomato and coconut. Blend it into a smooth paste.

Wash and chop onions.

In a pressure cooker add oil and heat it. Add the seasoning, when it splutters add the sliced onions and curry leaves fry till, they become translucent. Now add the turmeric powder & ginger garlic paste and sauté till the raw smell goes away.


Add the paste which we made earlier and cook it for a few minutes then add the rice after draining the water.

Add proportionate amount of water and salt as per your taste.


Now add ghee & garam masala powder and mix thoroughly. Cook it for 2 whistles. When the steam is gone open the lid and mix lightly.


Your dish is ready to be served along with raita.

Note:

You can use basmati rice or bullet rice or raw rice.

Usually we cook rice with 1 :2 water , but since we soaked the rice just add 1 ¼ cup water for this recipe , because there is water content in the paste we grind and also in the onion .

We are adding coconut in this recipe so that the rice will not become dry even after few hours, so we can pack this for kids' lunch box.
