Gobi Paratha

Do your children simply give you a big frown when they see gobi masala on their plates? Do they always ask you to fry it for them? Well, that's how children are. And do you always think that frying it is unhealthy? Well, that's parents!) So to keep the whole family happy and healthy I came up with with this simple and tasty recipe which is a treat for dinner. My children love it a lot! Hope yours like it too..



Preparation time:20 mins

Serves 4


Ingredients:

Cauliflower-1 med sized

Wheat flour-2 cups

Garlic-4 cloves

Ginger-1 inch piece

Green chilly-2 nos.

Chilly powder-1/4 tbsp.

Garam masala powder-1/2 tablespoon

Coriander leaves-1/2 cup

Turmeric-1/4 teaspoon

Salt to taste

oil or ghee-4 tbsp.


Preparation:

Take the wheat flour, add the required amount of salt. 

Mix it with water and make a smooth dough and let it rest for 10 mins. before which we shall prepare the stuffing

Take the cauliflower florets and soak in warm water with salt for 10 mins.

Drain them and finely grate them.

Finely chop garlic, ginger, green chilly and coriander leaves.. keep it aside.

In a kadai, add 2 tbsp. oil and put the grated cauliflower, add little salt and turmeric. Mix thoroughly and cook covered while stirring occasionally.

When the cauliflower is cooked, add the chopped veggies along with chilly and garam masala powder.

Add salt if required, add the coriander leaves and mix thoroughly.

Let it cool down to room temperature.

Now make the dough into medium-sized balls, and roll it out into palm-sized circles.

Place one big spoon of stuffing in the centre of it and make it into a potli.



remove the excess on the top and roll it out into parathas.

Heat the griddle and cook the parathas on both sides applying the required amount of ghee.

Your paratha is ready to be served along with raita or pickles.

The main trick of preparing a perfect stuffed paratha is: while you make the potli, give some air gap within the potli when removing the excess dough on top.


This will help you roll out the paratha without tearing the layers.


You should also sprinkle enough dry flour when rolling.
