Cauliflower egg bruji
Only after getting married I came to know egg could be added to vegetable dishes. My mother makes eggs as a dish by itself but never did with veges. This recipe I learnt from my mother in law. To be frank, at first I hated this dish because I wasn't used to it, but later I started liking it and my whole family likes it too.In this recipe here I'm giving my version of how I do this dish. Hope you also like this prepration.

serves - 4
Ingrediants:
Cauliflower - 1 medium
Big onion -1
green chili - 2 nos.
curry leaves - 1 sprig
eggs - 3 nos.
turmeric powder - 1/4 teaspoon
freshly ground pepper - 1/4 teaspoon
oil - 2 tablespoons
Sesoning:
Jeera - 1/4 teaspoon
Pepper - 1/4 teaspoon
Preparation:
Chop the cauliflower into medium sized pieces put it in warm water with some salt and turmeric powder for 10 minutes so that the chemicals sprayed and worms go away.
In a kadai, heat the oil and when its ready reduce to medium flame and add the seasoning, when pepper start to pop add turmeric then the finely chopped onion and slit chilies, saute till they are change color.
Now, drain the cauliflower and add it along with required amount of salt as per your taste.
cover it and cook for few minutes, stirring occasionally until they are 3/4 cooked
In a bowl whisk 3 eggs until they are frothy then add it to the kadai and mix thoroughly so as it coats the cauliflower pieces. cover and cook in low flame for few minutes untill they are cooked fully.
Open, add pepper and toss around then check for salt.
you dish is ready to be enjoyed.
This tastes amazing just with rasam rice.
Notes:
I add pepper only if im sending this in lunch box. otherwise I spice it up with more chilies that way it tastes even better.
