Caramel Pudding

Preparation time:
40 mins
Serves 8


Ingredients:

For caramel:
Sugar-1/2 cup
Water-1/4 cup

For pudding:
Milk-2 cups
Sugar-1/2cup
Unsalted butter 2 tablespoons
Sooji-3 tablespoons
Eggs-2
Vanilla extract-1 teaspoon

Preparation:
Grease the pan in which you are going to make the pudding with ghee and set aside.
Keep a heavy bottomed pan on the stove in medium flame and add the sugar and water and stir for about 10-15 mins. until the syrup becomes golden brown in colour -your caramel is ready
Pour the caramel into the greased pan and allow it to cool
Take another pan, keep it in medium flame and add milk, sugar and butter knobs and bring it to a boil
Now add sooji into it and allow it to cook for 5 to 6 minutes
Switch off the  stove and let it cool down.
In a mixing bowl, pour the eggs and wisk it till they are frothy.
Now add the cooked pudding mixture into the eggs little by little while stirring continuously till all the mixture is done.
Then pour this into the pan in which you have set the caramel.
Steam this pan covered in an idly maker for thirty minutes.
Now open and insert a toothpick to check if its done.
If the toothpick comes out clean, your pudding is ready.
Else you should steam it for another 5 minutes.
Remove the pudding from the idly maker and cool it to room temperature.
Then refrigerate for 20 minutes.

Flip out the pudding on a serving plate and enjoy.

Notes:
If you want egg-less pudding, you can add 1/2 cup curd and two Tablespoons of custard powder instead of the eggs.
You may garnish with whipped cream while serving.
