brocolli and almond soup

Preparation time:
20 minutes
Serves 4

Ingredients:
Broccoli florets-2 cups
Almonds- 10 nuts
Milk-1 1/2 cup
Onion-1 big
Garlic-8 cloves
Butter-1 knob
Oil-2 Tbsp.
Pepper corns-1 tablespoon (freshly ground)
Turmeric-1 teaspoon
Salt to taste




Procedure:
Soak the florets in warm water with salt and turmeric powder for 10 mins

Soak the almonds in hot water for 10 mins. and peel them.

In a heavy bottomed sauce pan add oil when it is warm, add the onions and garlic and fry them until the colour changes.


Now add the florets, draining the water in which it was soaked, add salt as required

Cover and cook for 8-10 mins. without adding any water, it will self cook in its own steam.


Now open the lid and allow it to cool to room temperature
When it is completely cooled down, add it to the blender along with the milk and almonds and puree it into a smooth mixture


Pour it back into the same sauce pan, add a knob of butter and crushed peppers, allow it to come to a brisk boil.

Now your is ready to be garnished with a few cilantro leaves and served hot


Chef's tips:
Instead of almonds, you can just add half cup of fresh cream instead after blending the ingredients

Simple healthy soup which you can make with just one ingredient
